Mermaid Noodles with an Avocado Swirl


We are so excited to share this vegan, gluten-free recipe with you from Tanika from Naturally Neak Naturopathy who had her Super Smoothie blend in our October box!

Ingredients:

1 bunch of Coriander

1 large Red Chilli

1 pack of Rice noodles 2 Limes 1 Avocado 2 teaspoons of Garlic 1 teaspoon of Ginger ¼ cup of Tamari 1 teaspoon of Coconut Sugar ( optional ) 1 teaspoon of Apple Cider Vinegar ¼ cup of Olive oil

Salt and Pepper Black Sesame Seeds ( garnish )

Natural Food Colours: Pink: Beetroot Juice Purple: Red Cabbage Green: Spinach and Spirulina

Recipe

Noodles

Break up the Rice noodles into three containers. In container 1 add your rice noodles, beetroot juice and hot water and cover for 10 minutes. In container 2 follow the same process but add largely chopped red cabbage. Container 3 follows the same process but add spinach leaves and spirulina to create the green colour. As the rice noodles absorb the water they will also take on the plant pigments giving the noodles the beautiful pastel colouring. If you don’t want to use the food as natural colourings, food colouring gels from the market will work just as well.

Thai Pesto

This is the chunky Thai inspired dressing that is tossed through all the noodles once they have cooled and taken on their colours. In a high powered blender add the juice of 1 of the Limes, Olive oil, Ginger, Tamari, Apple Cider Vinegar, Coconut Sugar, 1 teaspoon of Garlic and blend until all ingredients are combined. Chop the coriander and Chilli finely and add to the dressing.

On a large plate add the noodles and dressing together making sure the noodles are evenly coated.

Avocado Swirl

In a high powered blender add your avocado, juice of the last lime, the last of the garlic, salt and pepper to season with a little water to reach desired consistency. It should be thin enough to be piped out of a zip lock bag. Place mixture into a zip lock bag and cut the corner. Pipe the mixture to make a swirl over the noodles.

Garnish the dish with left over coriander and black sesame seeds.
